Balsamic Cucumber Tomato Salad

Summer is just about over and the tomatoes are almost done fruiting. I really enjoyed growing my veggies in containers this year then in the ground. It was simple and easy. I had to use a bit extra fertilizer the containers then when the veggies were in the ground. I guess they required a bit extra tlc now that they are in containers. Since the tomatoes are so juicy! I have been making lots of salads and this one has been my favorite.  Balsamic Cucumber Tomato Salad

Balsamic Cucumber Tomato Salad

I feel like my salad skills and photo skills need to improve because this picture is not doing this delicious balsamic cucumber tomato salad justice. This salad has so many flavors going on from the fresh basil, black pepper and homegrown tomatoes. I think it’s time for me to get a new lens or better software. Because my food photos definitely need an upgrade. But for all you summer tomato lovers this salad is quick easy and tasty with any meal.

Balsamic Cucumber Tomato Salad

 

 

Balsamic Cucumber Tomato Salad Recipe:

4 medium-large tomatoes, diced

2-3 large cucumbers peeled, diced

3 basil leaves (I used dark opal), finely chopped

2 tsps. black pepper

3-4 tbsp. balsamic vinegar

Recipe Directions:  In a medium bowl add tomatoes, cucumber, basil, and balsamic vinegar. Mix together until combine. Add black pepper and serve immediately.
