Chocolate Peanut Butter Espresso Cake +Peanut Butter & CO Giveaway

Chocolate Peanut Butter Espresso Cake      Spring is finally here and since I am nowhere near snow, I can finally enjoy the warm 80 degree weather! With spring brings national peanut butter month and oh I hear a song in my head. Yes this is the month where peanut butter rules and jelly drools. I guess that’s why when Peanut Butter & Co contacted me to remind me that it was national peanut butter month. I had no choice but to get in the kitchen and get creative with peanut butter.  Chocolate Peanut Butter Espresso Cake

I decided to espresso myself and add a little bit of espresso to this lovely cake I created. I just love dark chocolate dreams peanut butter and with the combination of espresso it’s a match made in heaven. You’re more than welcome to add it to a cake pan, but you already know I have in obsession with loaf pans and anything that looks like bread. If you’re not an espresso fan go head and lower the amount of espresso to 1-2 tbsps. But if you love the notes of espresso go ahead and leave it like it is or espresso yourself and add a little bit more.

Chocolate Peanut Butter Espresso Cake

Chocolate Peanut Butter Espresso Cake Recipe:

2 cups flour

2tsps. baking powder

½ tsp. salt

4tbsps. espresso (more may be needed to taste)

1 cup white sugar

½ cup brown sugar

½ cup butter (I used whipped)

2 large eggs

1 tsp. vanilla extract

1 cup milk

½ cup dark chocolate dreams peanut butter (I used PB&CO)

Recipe Directions: Preheat oven to 350. Lightly grease a 9*5 loaf pan. In a medium bowl mix flour, baking powder, salt and espresso. In a large bowl beat sugar and butter until fluffy, add one egg beat and repeat until both eggs are mixed. Beat dry ingredients into wet alternating between the milk and dry ingredients until combined. Place half the batter into a bowl and mix in peanut butter.  Layer the light and dark batters by large spoonfuls and then swirl slightly with a knife. Bake in preheated oven for 30-45 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely, before slicing

    Love the swirl, quick breads are so fun, versatile and tasty. It’s one of those foods that can be easily experimented with little chance of absolute failure! I’m not a coffee drinker but no recipe with chocolate created in my kitchen is made without espresso powder, the flavor it imparts is phenomenal.
