Why am I just finding out how delicious oat bran is! Move over cream of wheat and oatmeal you have competition and oat bran is winning! I have wanted to try oat bran for a while, but it just wasn’t on my major list of things to try. Since it was on sale (you know I love a good sale) I decided to just get a bag of it. It was the best decision I ever made. I had a bowl for breakfast a few days ago, and once the spoon hit my mouth. I thought I was eating a combination of grits and cream of wheat in one bowl! The benefits of eating oat bran are endless and it tastes so good. It’s high in protein, fiber, and pretty low in calories.

Fun fact: Did you know oat bran per cup is lower in calories then oatmeal!

Green Apple Oat Muffins

Green Apple Oat Muffin Recipe:
¾ cup flour (I used whole wheat flour)
1 cup oat bran
¼ cup rolled oats
¼ tsp. salt
½ tsp. baking powder
1 large banana
1 tsp. vanilla
¾ cups sugar (I used coconut)
½ cup egg whites
2 tbsps. milk (I used almond)
1 green apple finely chopped (shredded is better)
Recipe Directions: Preheat oven to 350 degrees, mix dry ingredients in a small bowl and set aside. In a large bowl add banana, egg whites, sugar, vanilla and milk. Mix until the mixture becomes a smooth puree (I used a hand mixer). Add the dry ingredients to the wet ingredients and mix until combined.  Fold chopped apples into the batter until they have been combined.  Place cupcake liners in a muffin tin and add 1-2 heaping tablespoons of batter to each liner. Place in the oven and bake for 30 minutes or until a tooth pick inserted in the middle of the muffin comes out clean.

    Yum, I love oat bran too and they sound awesome in these healthier green apple muffins! Loving all the oats in here as well as the whole wheat flour :)
