Coconut Banana Bread (Crock-pot Style)I love banana bread, this recipe has been passed down from one girl to another in or family; of course I forgot the recipe so I called my sister. I asked her did she remember the recipe for banana bread with coconut in it, she had no clue what I was talking about. That conversation took about an hour, of course me complaining about how she could forget such an important recipe like that.
I finally decided to call my grandma; well that conversation took an hour about how I should bake it. Then she told me why it is better to mix all your dry ingredients before adding them into the wet; instead of just adding all the dry ingredients to the wet (my style). It is too hot for this bread to go in the oven so I decided to use the crock pot. I was happy the whole house smelled like banana bread.

I used margarine, I just did not have any butter. Don’t tell grandma

Coconut Banana Bread (Crock-pot Style)

Recipe:

  • 1/2 cup sugar
  • 1/2 cup margarine
  • 4 bananas
  • 1 tsp coconut extract
  • 2 eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 3/4 cup shredded coconut

Instructions: 

  • Preheat crock pot without the the ceramic bowl inside.
  • Place margarine, bananas, and sugar into bowl and mix together with mixer; mix in coconut extract and eggs to the mixture.
  • In a separate bowl add flour, salt, baking powder and mix together.
  • Dump the dry ingredients into the wet ingredients and mix together; once done add the coconut.
  • Pour mixture into well greased ceramic bowl and place inside crock pot until done.
  • Let cool and serve

Recipe Notes:

The bread is done in about three hours, but I left it in longer because I like my bread to look brown on the top. I also kept the crock pot on low for two hours and high for another two hours. If you want to just keep it on low it may take a while but it will be done just be careful not to burn the bottom of the bread.

Greek Yogurt Blueberry Topping 092It would not be summer without blueberries; I like to freeze them and save them for the winter when I want them the most. I am happy to get them fresh especially when they are sweet and ready for me to eat like candy. Everyone at work has been commenting on my new finger stain nail polish due to the blueberries I have been happily chowing on the whole week.
I have not been able to make pancakes during the week so I have resorted to making them on the weekends. The bad part I ran out of syrup; the good I have blueberries I can come up with anything. Let the blueberry creations began.

Recipe:

  • 6oz container Greek yogurt
  • 1/2 cup blueberries
  • 1 packet NuNaturals stevia

Directions:

  • Add all the ingredients to the food processor and blend

Recipe Notes: I have made this recipe a couple of times and it lasts about a few days, three at the most. It is great to put on oatmeal, salads, and of course pancakes. The topping is about 141 calories and makes enough to serve three.

The Pup Investigation

008I decided to investigate the puppy situation even further to figure out what was going on, so after 20 million questions I finally got the truth out of country man. We have puppy! I wish he would have told me this when he brought her home. I was told that he was waiting for the right time to tell me; I guess after all the stuff he bought her that was not the appropriate time. I feel like a stork brought me a baby that I did not want; now I am a mother to a four legged puppy. I have no clue how to raise her (I never asked for this).

Even though I grew up in the city; my mom practically raised us around animals. I always dubbed are house the inner city zoo, because we had all kinds of animals (including ducks). I knew I never wanted any animals again, but that all changes if you just happen to find a man who was raised on a farm; he will try to get you to move to a farm (someday) and bring all sorts of animals home.

Due to my investigation I learned the puppy we got is a rescue puppy; she would have ended up being used in dog fights if we did not take her in. She was cut up really bad, had a few bruises, and cuts on her when she first got her; they seem to be healing up nicely with lots of TLC. She is only 8 weeks and she still is scared, she has really bad night terrors; she will scream in her sleep. She sleeps in the bed with us (something new to me) and cries like a big baby if I don’t pick her up; she is notorious for stealing my shoes and getting away with murder. I guess I have become a mommy without even knowing.

Note: The body wash can get real messy, I bought this soap for a dollar and wanted a quick body wash to use. I would recommend using a better brand or add essential oils and other oils. I used olive oil in this recipe, it was a cap full and it dissolved very well. I will do more experimenting; making homemade body wash from cheap soaps that will not dry the skin out (this body wash will).
