Creamy Oatmeal Porridge With Coconut Sugar

Did you know blood oranges were in season? I had no clue until I went to the grocery store and seen a big bag of them! I nearly fell over the grocery cart because I was jumping up and down with excitement. It’s been awhile since I have seen blood oranges! The last time I had some was when I was in L.A. Josh doesn’t understand why I was so happy to get them. He swears they taste just like navel oranges, but I think they taste even better (maybe it’s just the color).  I think I may freeze some, and wait to summer to enjoy them with a bit of mango..  Creamy Oatmeal Porridge With Coconut Sugar

What are you favorite things to do with blood oranges? Lately I love eating them on top of oatmeal. Which is a perfect combination since the weather is still pretty chili in the morning.

 

Creamy Oatmeal Porridge With Coconut Sugar

Creamy Oatmeal With Coconut Sugar Recipe:
2 cups milk (I used almond)
1 cup rolled oats
½ cup coconut sugar
¼ tsp. salt (optional)
Recipe Directions: In a small bowl add roll oats and 1 cup of milk, let it sit for 5 minutes. In a medium sauce pan on medium heat; add remaining milk, coconut sugar, and salt. Let the sugar dissolve into the milk. After 5 minutes add oats to the sauce pan and turn the heat up, bringing the oats to a boil. Once the oats began to boil turn the heat down. Let the oats simmer for about 10 minutes or until the mixture thickens. Let cool and serve in medium bowls.

    I love blood oranges for their bright and pretty color too:) I usually just eat them on their own or in a salad but adding them on top of a creamy bowl of oatmeal sounds awesome and really tasty!

    Haha, I’m a BIG fan of blood oranges as well! I was so exited when the season for blood oranges began this year. My dad had bought a bag of what he thought was just oranges, but then I peeled one and I literally jumped up and down from excitement. I don’t think I’ve gotten one since I was ten 😉
