Oatmeal Pancakes (Single Serving)

My goal was to eat pancakes every day for the rest of my life as a child; now that I am all grown up I struggle trying to get out of bed and make breakfast. I miss the thought of eating pancakes for the rest of my life; but when I have time I enjoy making  a single serving just for me. I am happy with not having a big mess and not so many dishes I half to wash.

I decided that after my break from oats! I miss eating them

They may have a bit of an egg  flavor, I will try egg whites next time.

The batter will be runny but it will thicken up

Make sure your skillet is hot and ready to go

Confession: I have made these three times in one week and lost 2 pounds

 

Oatmeal Pancakes (Single Serving)

Recipe:

  • 1/2 cup oatmeal
  • 1 egg
  • 10 drops stevia
  • 1 tsp baking powder
  • 1/2 cup milk (I used almond)

Instructions: Place all ingredients into the food processor and blend; let the mixture settle and heat up the skillet with oil and let it get really hot.Once the skillet is hot enough pour pancake batter into skillet and enjoy.

    Thank you, these were great! I love eating pancakes/baked goods without flour, I feel so much better without it. I used coconut milk from a can and left out the stevia since I didn’t have any. Delicious!

      Thank you so much for letting me know you enjoyed the recipe! I use a lot of oat flour in my cooking as well. I should post more recipes with oat flour 🙂
