Chunky Chocolate Cookies ( The Misplaced Recipe Cookie) Have you ever had a great recipe for “cookies”.  You wrote and misplaced the recipe, looked everywhere for the recipe and could not find it. Leaving the house a mess and your brain warped.   When you finally have time to recreate the recipe all the key ingredients (sugar) are gone and most of the stores are closed so you half to improvise. Well this is what happened with the chunky chocolate cookies. I had to recreate another recipe which took a few hours, but it was worth it because the Chunky Chocolate Cookie recipe turned out great!

I never tried coconut sugar in cookies before, that being said I thought the cookies would turn out horrible;  but it was not as bad as I thought it would be! The cookies had more of a strong caramel flavor then brown sugar would have. I am happy to have used coconut sugar because I did not want to use it!  I thought it would have been a challenge (it was) that I just would have a hard time with.  The taste was incredible! They were soft and chewy, like a chocolate pillow in your mouth; they were not too sweet and you could taste more of the chocolate in the cookies.

The best part coconut sugar has half the calories of regular sugar, I think it was a pretty good swap for a yummy cookie recipe. If you are looking for a great cookie recipe with half the calories and the same great flavors; the Chunky Chocolate Cookies would be a great recipe. Chunky Chocolate Cookies ( The Misplaced Recipe Cookie)

 

Chunky Chocolate Cookies Recipe:

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup softened butter
  • 1 1/2 cup coconut sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup chopped baking milk chocolate

Chunky Chocolate Cookies Recipe Directions:

  • Preheat oven 350 degrees
  • Mix flour, baking soda, and salt in a medium bowl and set aside
  • Cream butter sugar, eggs and vanilla extract until creamy
  • Add the dry ingredients to the wet ingredients and mix
  • Fold in the chopped chocolate into the batter, scoop with an ice cream scoop or tablespoon the dough onto a parchment lined baking sheet
  • Place in the oven and let bake for 10-15 minutes or until the edges are golden brown

Funfetti Muffins

Funfetti Muffins I decided to make Funfetti muffins because lately my job has been turning into an all-out muffin war. I know many of you have heard of cupcake wars well they have nothing on my coworkers muffin war. I have no clue what possessed them to start a muffin war in the middle of summer; you can practically cook an egg on the side walk with this heat. I really think the heat has officially gotten to everyone, since the muffin wars have gotten serious and I feel like this may turn into world war 6.

It has gotten to the point where I do not even need to make breakfast at home anymore; I will just have a muffin when I get to work, sometimes I am excited to get to work  and chow down. The flavors are endless, someone actually stuff bacon and cream cheese into one (talk about a heart attack waiting to happen). Yes! I did want to try the heart attack muffin, but I thought it just may give me a heart attack so I stayed away from that muffin.

Funfetti Muffins  My favorites so far have been the low carb coco muffins that Megan made (I know you are reading this and I will be needing your recipe asap!) and the cherry vanilla muffins. I have no clue who made those muffins yet, but they are keeping their identity a secret ( I want that recipe as well). I guess they do not want to be a part of this insanity but love to show their skills.

No one is actually judging this contest and I have no clue how it started, but I decided I would make a muffin that they would not be able to resist. I did a pretty good job because everyone is asking who made the muffins with the sprinkles inside.

FunFetti Muffin Recipe:

Adapted from: Muffin Recipe

  • 2 cups unbleached flour
  • 1/4 cup brown sugar
  • 1/4 cup and 2 tbsp white sugar
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1 cup almond milk
  • 1/2 stick margarine
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 1 cup funfetti sprinkles

Directions: 

  • Preheat oven to 350 degrees
  • In a small microwave-safe bowl, heat margarine thoroughly until  it melts, set aside and let cool.
  • Combine the flour, baking powder, sugar and salt in a large bowl .
  • In a separate bowl combine room temperature butter, sugar, vanilla and eggs.
  • Add the wet ingredients to the dry ingredients and whisk together; fold the sprinkles into the batter.
  • Place paper liners into muffin tin, use 1/4 cup or 1/2 cup ice cream scoop and scoop into muffin tins.
  • Bake for 25 minutes or until the tooth pick inserted in the muffin comes out clean.

How To Series: Cooking Addition

I love to have variety and lately the blog has not been very versatile. I try not to limit myself but for some odd reason I have been doing just that.  I would like to do more dinner and breakfast recipes. I love cooking on stove top when the weather is like this, but I have not used the stove in a while. Most of the dishes I have made require an oven or food processor. I have no clue what has gotten into be but I am trying to snap out of it. I am thinking about doing more skillet meals pretty soon.

I know have not been in the mood to just get in the kitchen to cook, style, and then photography the food; mainly because I will eat what I am supposed to be photographing. By the time I am done I will have a half-eaten chicken leg instead of the whole leg. It is hard for me not to eat as I cook, I have been doing it as a little girl and I’m still doing it. I would say that maybe the reason why I am never hungry when it is time to serve dinner.

I will half to work on my eating while photographing if I want to get through a photograph session without all the food being eaten on the set (the food looks so good). I decided to start a new cooking series on the blog.  I dub it the How To Series: Cooking Addition. I will be covering a lot from dehydrated recipes, drinks, flours, and spices in the series. I will include lots of pictures in my tutorials! I repeat a lot of PICTURES so you betta be prepared. I know some people do not like so many pictures they can be overwhelming, well you will be overwhelmed with this new series. I am looking forward to doing tutorials; I love to teach and show how to make recipes in great detail (one of my favorite things to do). I hope this new series will give you some tips and helpful hints.

Lemon Coffee Face Scrub

Lemon Coffee Face Scrub During the summer I am not much of a morning person I would rather get up later in the day; it takes me a while to actually get out of bed. I loathe the process but it has to be done.  I decided to switch my facial scrubs because I was still feeling sleepy after I would use it. I know most of you know that feeling after you brush your teeth and wash your face you still feel sleepy, well this scrub is for you.

I am not a coffee person at all but my country lover loves the stuff, not too much in the summer but since he is driving 100 miles a day for work; he has been drinking lots of coffee to keep him a wake. That means left over coffee grounds that I can do whatever I want with. I have so many projects but my first one was to make a scrub that would keep me awake early in the morning. I think I found a great scrub I am going half to tweak it a little bit but for now it keeps me awake.

Lemon Coffee Face Scrub

Start with a cup of wet coffee grounds in a bowl make sure the grounds are fine and not to big they will be abrasive on your face, squeeze 4 whole lemons into the coffee grounds.

                   Add a tbs of cornstarch to the mixture and stir the corn starch will help absorb any oils that was left on your face from the night before.

Strain the grounds from the liquid you want a bit of moisture not to much

Mix well and make sure you you pick the seeds out

I do not use the facial scrub everyday just days when I just do not want to get out of the bed, and I know I need my morning to be up beat.  I may or may not be a coffee ground addicted, but I know we  all have those days where we just want to stay up in the morning. I would say this is great for me to use every other day weekends included :)
