Banana Chia Breakfast Cookies

I love breakfast but sometimes I find myself just a bit too busy to make it! I know it’s the most important meal of the day, but mornings are always a bit more time consuming then the rest of the day. I guess that is why the most important meal of the day is usually during the busiest part of the day.

Banana Chia Breakfast Cookies

Banana Chia Breakfast Cookies are not too sweet and they are pretty chunky. If you’re looking for a healthy breakfast that will keep you full all day. These cookies are worth baking and adding to your breakfast menu for the week!

Banana Chia Breakfast Cookies

Banana Chia Breakfast Cookie Recipe:
2 bananas (smashed)
½ cup apple sauce
¼ cup raw sugar
½ cup coconut sugar
1 tsp. vanilla extracts
¼ cup chia seeds
1 cup rolled oats
½ cup all-purpose flour
½ tsp. baking soda
½ tsp. salt
Recipe Directions: Preheat oven to 350 degrees, line a baking sheet with parchment paper and set aside. In a large bowl mix chia seeds and apple sauce, let the mixture set. While mixture is setting combine oats, flour, baking soda and salt in a medium bowl. To the chia mixture add coconut sugar, vanilla extract and banana; add dry mixture to large bowl until all the ingredients are combined. Place a heaping tablespoon of cookie dough on parchment paper, use a spoon to create your cookie shape. Place cookies in the oven for 15- 25 minutes or until cookies are firm to the touch.  Let cool and store in air tight container.

    These breakfast cookies look so good! I love banana treats and that’s awesome that you added chia seeds in here for extra fiber and protein. They sound perfect for a healthy breakfast on the go 🙂

    Yum cookies for breakfast! These look so healthy and yummy too! I love using chia seeds in desserts because it means you can eat them for breakfast 🙂

    I love banana-based cookies. I use browner bananas (overripe) for sweeter cookies (and cutting off raw sugar). I would love to incorporate chia seeds in cookies, that looks and sounds yummy! Perfect breakfast cookies on the go! 🙂

    Chia is a great superfood! It has numerous health benefits and including it in your breakfast will do only good to your body. Do you think that skipping the raw sugar will make the cookies not sweet enough?

      Depending on your palate, the banana may be more then enough to give you that sweet kick! 🙂

    Due to allergies, I can’t use the coconut sugar or raw sugar (but that’s due to me not having it), could I use regular sugar as a replacement for both?

    Made theses before and omitted the flour along with the sugar. Added cranberries, walnuts, and honey. Better combination

    how many cookies does this recipe make? looks so good!! also, i dont think i have coconut sugar (not sure where to buy that) could i use some other type of sugar instead?

    Wow, I love all of the ingredients you used! I’m always swapping out high-fat ingredients for healthier alternatives but you’ve made all the swaps for me, lol! Going to add this to my Sunday baking list 🙂

    Made these and they were very sweet .l would leave out most of sugar the banana is sufficient . Also are they supposed to be crunchy or soft? My were soft.
