Greek Yogurt Blueberry Topping 092 It would not be summer without blueberries; I like to freeze them and save them for the winter when I want them the most. I am happy to get them fresh especially when they are sweet and ready for me to eat like candy. Everyone at work has been commenting on my new finger stain nail polish due to the blueberries I have been happily chowing on the whole week.
I have not been able to make pancakes during the week so I have resorted to making them on the weekends. The bad part I ran out of syrup; the good I have blueberries I can come up with anything. Let the blueberry creations began.

Recipe:

  • 6oz container Greek yogurt
  • 1/2 cup blueberries
  • 1 packet NuNaturals stevia

Directions:

  • Add all the ingredients to the food processor and blend

Recipe Notes: I have made this recipe a couple of times and it lasts about a few days, three at the most. It is great to put on oatmeal, salads, and of course pancakes. The topping is about 141 calories and makes enough to serve three.
